Ingredients

  • 4 cloves of garlic
  • 1 onion
  • 1 red chili pepper
  • 1/2 bunch of parsley
  • 4 tomatoes
  • 50 ml olive oil
  • 1/2 tsp paprika powder
  • 50 ml ouzo or other anise liqueur (this might sound unusual, but trust me, it really enhances the flavor)
  • 1 tbsp tomato paste
  • 500 g raw shrimp
  • 125 g feta
  • 1 tbsp @neoleaofficial citrus salt
  • Crispy bread for dipping

    Instructions

    1. Peel the shrimp first. Cut the feta into cubes and set aside.
    2. Finely chop the onion, crush the garlic cloves, and halve the chili pepper, removing the seeds before dicing.
    3. Finely chop the parsley. Score the tomatoes crosswise and immerse them in boiling water for 1-2 minutes. Let them cool slightly, then peel off the skin and grate coarsely.
    4. Heat the olive oil in an oven-safe pan or baking dish that can be used on the stovetop. Add the onion and chili pepper, and cook on very low heat for 5-10 minutes. Then add the garlic and cook for another minute.
    5. Add the ouzo and let it evaporate. Stir in the tomato paste and cook for 1-2 minutes to release the flavors.
    6. Add the tomatoes and bring the mixture to a boil. Reduce the heat and let it simmer for 10 minutes until the sauce thickens.
    7. Preheat the oven grill to 200°C (392°F). Place the shrimp on the sauce and distribute the feta over the top. Grill in the oven for 6-8 minutes until the shrimp turn pink and the feta is golden brown.
    8. Sprinkle with parsley and Neolea citrus salt, and serve with delicious bread to soak up the sauce.
