- Peel the shrimp first. Cut the feta into cubes and set aside.
- Finely chop the onion, crush the garlic cloves, and halve the chili pepper, removing the seeds before dicing.
- Finely chop the parsley. Score the tomatoes crosswise and immerse them in boiling water for 1-2 minutes. Let them cool slightly, then peel off the skin and grate coarsely.
- Heat the olive oil in an oven-safe pan or baking dish that can be used on the stovetop. Add the onion and chili pepper, and cook on very low heat for 5-10 minutes. Then add the garlic and cook for another minute.
- Add the ouzo and let it evaporate. Stir in the tomato paste and cook for 1-2 minutes to release the flavors.
- Add the tomatoes and bring the mixture to a boil. Reduce the heat and let it simmer for 10 minutes until the sauce thickens.
- Preheat the oven grill to 200°C (392°F). Place the shrimp on the sauce and distribute the feta over the top. Grill in the oven for 6-8 minutes until the shrimp turn pink and the feta is golden brown.
