How it's made

Oil that has the real flow
From Messinia, Greece - our oil is extracted from the Koroneiki olive. Small
in size, superior in flavor.
The trees are surrounded by wild aromatic plants and together with an innovative extraction process define the Neo quality standard.

the tones that are found in our extra virgin olive oil’s profile

By traditional method
The fine bubble is created by second fermentation in the bottle. After minimum aging of 15 months on the lees, every bottle is turned about 90 - 120 times by hand - the bottles are disgorged one by one.
Next to creating a fine, everlasting bubble the champenoise process produces the wonderful brioche flavor.
Bio-dynamic & organic
The full production process is in total harmony with nature which is about using natural ways to put back into the earth what we take from it. The grapes are certified organic. External inputs like
fertilisers are avoided or minimized. The process of certification is in progress and will be visible on the label of the 2020 vintage.


Forgotten grapes
Although Greek wines are often considered new world wines, it’s heritage tells a different story. Over the years many varieties were planted as Greek wine production evolved. Only in recent years
cultivation is reaching back to its roots rediscovering unique ancient varieties such as Xinomavro, Assyrtiko and Limniona that are used for the Neolea wines.
Located 650m above sea level at the Amyndeon plateau in
the far North-west of Greece, the winery knows a semi continental climate. Cold winters and hot dry summers with cool nights give our wines their expressive acidity.
Salt that
shakes it up
Salt is the only ingredient that is used in all cultures around the world and
it is the one ingredient that impacts the flavor more than any other.
Our hand harvested Sea Salt comes from the Greek Aegean sea. Harvesting from the rocks keeps the salt pure and adds nutritional
minerals.


As nature
intended salt
By keeping the salt in its natural condition the flakes come in their
original, irregular shape. Creating a more interesting taste experience.
Whether it's grapefruit or oregano, by adding organic ingredients, we've created the right salt for every dish.
Naturally Sweet
Our Balsamic Vinegar is naturally sweet due to a unique ratio of grape
must and vinegar (70/30). This higher percentage of slow cooked grape must allows for a thicker and sweeter balsamic.
The ageing process takes 3 years in brand new French oak barrels, giving extraordinary
texture, taste, aroma and color. This results in a complex flavor with notes of fig, molasses, cherry, chocolate and prune.
