Can you fry with olive oil?

The lower the acidity, the higher the smoke point of your oil however deep frying is too hot and will make any unrefined oil burn creating bad flavor and is unhealthy. Using extra virgin olive oil instead of lower quality will always add more flavor when shallow frying however some of the aroma and flavor may get lost due to the heat which is partly why extra virgin olive oil is cold extracted (<27°C or 80.6°F).
