Green shakshuka

We’ve all seen it, we all wanted to try it - Shakshuka! It was all over social media and you couldn’t miss it the last few months. But what about it’s smaller cousin? The Green Shakshuka:

Ingredients:

  • 400g fresh baby spinach
  • 4 scallions
  • 2 onions
  • one glove of garlic
  • small pack of parsley
  • a little dill
  • a hand of mint leaves
  • one lemon
  • 200g feta cheese
  • 2 eggs
  • fresh bread to serve it with
  • Neolea Extra Virgin Olive Oil


Instructions:

Shakshuka is Hebrew for “all mixed up” and like the original red shakshuka it’s smaller cousin takes it’s title by word and mixes all your favourite greens for an amazing fresh and healthy combination. In generell you can use everything you want for your shakshuka, there is no right and wrong!

For this version start with cutting your onions in half and slicing them finely. Give  a good drizzle of olive oil in you pan and stew them up together with your minced garlic. Put the pan on medium to low heat, wash your spinach and add it to the pan. Season it all with salt and freshly grounded pepper, along with some nutmeg, and dried herbes de provence. Cut you lemon in half and drizzle it’s juice over the greens. Add your chopped scallions and herbs to the mix (keep some parsley for garnishing). Now you can add the medium sized cubes of feta cheese and stir it all up before cracking open the eggs on top of your greens. Cover it all up, season the yolks with salt and pepper and let it sit until your eggs are firm. 

Garnish your green shakshuka with the remaining parsley and serve it hot together with some fresh bread of you choice.
